Whole Wheat Banana Muffins

Whole Wheat Banana Muffins

jump to recipe I thought I’d run out of variations on a banana theme, but these Whole Wheat Banana Muffins took me by surprise. They taste like the best banana bread, but slightly softer and fluffier as befitting a muffin.  Don’t skimp on the bananas when you make these! This isn’t one of those recipes […]

Mini Lemon Poppy Seed Muffins

Mini Lemon Poppy Muffins

This edition of Baking Adventure in a Messy Kitchen will heretofore be known as. . . The Flattening.

I don’t know why these mini muffins turned out so flat. The photos on the original recipe look lovely, with tiny, cute puffy little muffins perched on a tea towel. Mine came out flat as pancakes on top, almost as if I wanted them that way. Oh wait! Yeeah, I WANTED them that way. Flat muffins. Who doesn’t want flat muffins?

Carrot Bran Muffins

Carrot Bran Muffins

jump to recipe These muffins. These muffins! The fact that they are so healthy and good for you makes no sense with how delicious they taste. And I took a risk with these, changing the recipe mid-process, on a whim. A crazy, carrot- bran whim! I never knew there was such a thing. Once the […]

Greek Yogurt and Coffee Chocolate Chip Muffins

Greek Yogurt And Coffee Cappuccino Chip Muffins

jump to recipe These are insane. Now they’re not crazily low fat or anything, but they’re not anywhere near as decadent as they taste, and the flavor combination in these muffins is absolutely exquisite. Semi-sweet chocolate, turbinado sugar, espresso powder, and a hint of orange come together to create some sort of flavor perfection that […]

Apple Cider Mini Muffins (and big ones too)

Mini Muffins

Okay. These are incredible. You know when you go apple picking and they sell these crazy apple cider donuts that you can’t stop eating? Well this is the home version. There’s no frying with these, and the ingredients are shockingly NOT unhealthy, but more important than that on this special day is that they are […]

French Yogurt Cake

French Yogurt Cake

Well. I wasn’t going to bake tonight, I thought I needed a break, but then I decided it might be fun to make something new and then watch the opening ceremonies of the Olympics. We have a friend of the family competing tomorrow. Go Nicole! And even though I’m not watching them live, I recorded […]

Peanut Butter Chocolate Chip Mini Muffins

Peanut Butter Chocolate Chip Mini Muffins

(and other baked goods) It’s Mother’s Day, so I’m allowed to bake as much as I want, right? Last night I made the carrot oatmeal muffins again as well as the low-fat gingerbread, and then started off today with mini pancake maple muffins. Once I got those cleaned up, I whipped up some more lemon […]

Pumpkin Muffins With Sugar On Top

Pumpkin Muffins With Sugar On Top

jump to recipe I had Greek yogurt to use up, and I wanted to try something new, and I wanted to keep myself busy and distracted. The result? Pumpkin muffins. I started with whole wheat white flour, then whisked in baking soda, baking powder, and salt. I threw in more cinnamon than the recipe called […]

Back At Home With Lemon Ginger Tea Muffins

Lemon Ginger Tea Muffins

I am back from my trip, operating on almost no sleep, but feeling the need to ease some stress with baking. I found this recipe for Lemon Ginger Tea Muffins on Pinterest and thought it was worth a shot. I didn’t add the pistachios, though. They looked really good, but they add Weight Watchers points that I could do without, I’m trying to get back on track after some missteps.

Nathaniel wasn’t feeling well at school today, so when Dave brought him home I was able to get the lemon ginger tea on double duty, brewing his up with some honey to soothe his weary throat. Should I mention he was playing Lego Harry Potter on the XBox at the time? Sick days can be fun.

On to the muffins.
