After I threw the corn muffins away, I had to make something else, and it was almost lunch time, and the kids requested that the primary flavor be peanut butter. I couldn’t argue with that idea, as I love peanut butter with a fierce, obsessive love. We’d had baked oatmeal at Mussers’ Bed & Breakfast a few weeks ago, and I loved it even though I ate around the cooked fruit in it, so this was an easy call.
I also liked that the directions were basically this:
Mix all ingredients together and stir well. Spread in a greased 9×13 pan. Bake at 350 for 20-25 minutes.
I haven’t been feeling very well since I woke up this morning, so this was just about all I could handle.
In went the quick cooking oats, brown sugar, and melted butter.
I measured out the peanut butter, which means I didn’t exactly level off the cup to make sure I was right on the mark.
I added the baking powder, salt, eggs, milk, and vanilla.
And mixed.
I forgot to take a picture of it in the pan before baking it, but it didn’t look all that different when it came out, just a little crispy around the edges.
Nathaniel asked for his in a bowl, so he could add warm milk to it.
After he put the milk in, he thought it was delicious, but cautioned me not to photograph it because it looked like vomit. I photographed it anyway.
But he really did love it. First he just tried to show me his happiness while eating it:
Then it inspired him to do the “deliciousness dance”, as he called it. Juliet joined in, although she was eating carrots with hummus instead.
Later, Juliet caved and agreed to try it. Success!
And she did her own special dance, now that she had the kitchen to herself.
So the bottom line is, if you like to see your kids dance, make them some peanut butter baked oatmeal. It made me dance a little too.
