Fresh start Sunday.

I have not been very good when it comes to Weight Watchers over the past few weeks. I just got this sense of entitlement about late night snacking that has not been serving me well. (But isn’t late night snacking one of life’s joys? Why must it be so bad for you? WHY?)

But, it’s time to start anew. I can see this getting out of control, past the few extra pounds I gained into a world of self-loathing I have no intention of revisiting. (That was even less fun than not having late night snacks.)

To kick off my new week and hopefully my new sense of purpose — and to stay in all my new sizes of clothing that make me so happy — I made some banana muffins last night. They are based on a recipe I found through Pinterest, but I changed it up after reading the reviews the first time, and this time I think I nailed it.

In case anyone wants to make them, here are the changes I made:

  • White sugar –  I changed it to half white & half brown. It wasn’t precise: I just had them share the 1/4 cup measuring cup.
  • Cinnamon – I added 2 heaping teaspoons
  • Nutmeg – I didn’t measure it, just grated some and added. It was about 1/4 – 1/2 teaspoon.
  • Peanut butter – A hefty glob. Is that not helpful? It was probably about 1 1/2 tablespoons. It just gave the muffin a solid undertone, if that makes any sense.
  • Sour cream – I swapped it out for low fat vanilla yogurt.

For vanilla, I’ve started using higher end brands, and it does make a difference, I think. I’m also grating the nutmeg as I need it, I don’t use the ground anymore. I have this nifty little Microplane grater that I love.

I ate one of the muffins last night (stupid late night snacking) and loved it. I don’t want to tell you what ELSE I ate last night, because it isn’t pretty, but those days are over. So are my Sunday nights of watching Worst Cooks In America, since the season ended last week! That was a fun show. Vanilla in the chicken! Twice!

It’s morning now, though, and I just bit into a banana muffin (2 WW points if anyone cares). These really are the best ones I’ve made yet! The recipes calls for an entire tablespoon of baking powder and I will never doubt it again, despite the anger in some of the reviews demanding to know how that could be considered acceptable.

The muffins are light, fluffy, and flavorful. A good way to start off, when I’m trying to eat well and kick my own ass: a treat! Something delicious and homemade, too, with some wholesome happy ingredients like bananas and yogurt and cinnamon.

Okay, I can’t help it, I do have to post about the one delicious snack last night and if I’d stopped there, everything would have been just fine. It’s actually not unhealthy, and it’s really satisfying and sweet and feels decadent but isn’t. Ready?

Peanut Butter Chocolate Dip, make with Skippy Natural Creamy Peanut Butter, chocolate syrup, and vanilla yogurt. Remember, I hate yogurt, so I changed the peanut butter & yogurt ratio slightly in favor of the peanut butter. I sliced up a Red Delicious apple and dipped away. It was lovely. Maybe if I make this my snack to look forward to after dinner, I might be able to get back on track without feeling so deprived.
