Coconut Baked Oatmeal

I wanted to make something relatively healthy, but I’m really tired too, so it was time to try Coconut Baked Oatmeal. I pinned the recipe after we devoured the Peanut Butter Baked Oatmeal from the same site (Lynn’s Kitchen Adventures), and it’s an easy recipe for the exhausted. You just put it all in a bowl, stir, pour, and bake.

But it’s not boring, either, because I got to use a new ingredient for the first time.

Coconut oil! Don’t cook your popcorn in it!

I’ve seen it pop up as in ingredient in a few recipes lately so I finally picked some up. Yes, I’m just crazy enough that when I needed coconut oil, I had some handy. I have no idea what’s up with all the baking, except that it’s my first tangible, physical hobby, and it makes people very happy.

One bowl. Started with brown sugar, milk, and rolled oats. I didn’t have quick cooking so I used regular. Then I added the coconut oil.

I added eggs, baking powder, salt, and yogurt. The last thing to go in was the coconut.

And then, with some stirring, it underwent its simple transformation.

I poured it into the pan, and topped it off with a little bit more of the coconut flakes, and a small sprinkling of Demerara sugar. I baked it for just over 30 minutes.

It’s pretty good. Nice crispy edges, sweet and chewy but wholesome and oaty too. Dave likes it and can’t wait to have it for breakfast in the morning!
