Peanut Butter Banana Oatmeal Bars (fail)

I’m a little sad about these.

There are so many other delicious things I could have done with those three overripe bananas. Instead I made these lame oatmeal squares. They were perfect, too, in an ideal state for baking. They mashed up beautifully.

In a separate bowl, I put together the oats, brown sugar, baking powder, salt, and cinnamon. (Of course I added extra cinnamon. Too bad it didn’t help.)

Into that I added a flax egg (only because we were out of real ones), milk, and vanilla. I mixed that together, then stirred in the bananas and peanut butter.

And I poured it into an 8 x 8 pan.

The recipe said to bake for 20 minutes, but didn’t give any indication of a desired look or texture. At 20 minutes, it still felt really squishy to me. By 40, it still needed a few more minutes. At 45, I gave up and took it out.

And the rest was just a big disappointment.

I love oats, I love peanut butter, I love peanut butter with banana. I love cinnamon. I love brown sugar! But once cooled and cut into squares, this stayed squishy and mooshy and I ended up scrapping it. No one else would even take a bite and I don’t blame them.

Boo.
