There are some baked goods that I call “get-it-out-of-the-house-or-gain-ten-pounds-delicious”, and I created that expression specifically to describe snickerdoodle mini loaves. They’re insane.
Antonia — the same Antonia who inspired me to make the Cheesecake Brownie Bites — asked for something decadent again, this time to celebrate John Calvin’s birthday tomorrow. She isn’t a Calvinist; in fact, that’s why she needs to be cheered up on his birthday. Life is complicated. And Snickerdoodle Mini Loaves make things better.
It all begins, as these things must, with butter and sugar, and in this case, salt and cinnamon too.
And then, once mixed, eggs.
Then I was supposed to add vanilla and sour cream, but I didn’t have any sour cream. I did have vanilla yogurt, so I replaced the sour cream with it, and toned down the vanilla a little.
Things were looking good.
Separately, I whisked together the remaining dry ingredients, which really just meant flour & baking powder. I added that to the other mixture, and blended, this time by hand.
See those cinnamon chips on the left? Here they come…
Yes, the whole bag. And THEN look.
I sort of wanted to swim in it.
Instead, I mixed up some white sugar and cinnamon for the topping, after spilling a pile of it on the counter.
Once everything was ready, I used about half the batter filling up the mini loaf pan.
And then I sprinkled the sugar & cinnamon on it. Perhaps sprinkled isn’t the right word. I covered each one with sugar & cinnamon.
While they were in the oven, I used the rest of the batter to make muffins. I got 12 out of the batch. Almost.
Everything looked pretty delicious when it was done baking.
The muffins looked pretty good too.
Now for the getting-them-out-of-the-house-or-gaining-ten-pounds part. They’re leaving with me in the morning, although the kids and Dave will get to keep some of them, as long as they promise to eat it all up before I get home from work.
