I made these again last night for two reasons.
Reason #1: I had two of these.
They were gigantic! And getting browner by the second.
Reason #2: I wanted to see if the gloriousness of the first batch was a fluke.
I put dry ingredients together: whole wheat white flour, cinnamon, nutmeg, baking powder, baking soda, and salt. And whisked.
Then I threw the gross-looking, overripe bananas into a bowl, and mashed them up until they looked disgusting (but smelled great).
I added the sugars, with my not-quite-precise method of filling a 1/4 cup measuring cup about halfway full of brown sugar, then filling up the rest with white.
And then added in the yogurt, vanilla, and egg.
Once I added the peanut butter, it looked disturbingly unappetizing, but I poured it into the dry mixture anyway.
And I finally got everything combined.
I forgot to snap a shot of the muffin cups before it all went in, but here is what it looked like at the end.
And while I was finishing up, I got to enjoy a little time with Nathaniel.
The final verdict: These are still absolutely incredible. They are light & fluffy, full of flavor, and an impossible-to-believe 2 Weight Watchers points.
