Maple Yogurt Pound Cake

I knew I still wanted to do some baking today! I’ve had my eye on this recipe from Food52 for Maple Yogurt Pound Cake. It won a contest! I had to try it.

I didn’t have Grade B maple syrup, had to settle for the good stuff, organic Grade A dark amber from Trader Joe’s. Oh, the shame of it.

Everything else I had on hand, and the recipe looked specific but simple enough, which was reassuring. Food52 is a fancy foodie site and a lot of times even when the end product looks great I don’t end up pinning the recipe because it looks too complicated for me. I’m new at this.

I started by whisking together the overqualified maple syrup, yogurt, eggs, vanilla, and lemon zest. I love my new whisk! It’s whisky.

Then I mixed the dry ingredients & mixed just enough to combine.

After that, you pour in the oil, and fold it in. They said this step was important, so I obeyed.

And that’s it! I baked it, it was done right at 50 minutes. It tastes really good, it has a complex flavor. At first you find yourself thinking about pancakes, and then the flavor changes, you get that hint of lemon, and the texture is so crumbly and moist, and it’s just unique and delicious. The kids like it as much as the adults. A win!

Now my in-laws are over today, and Dave has been busy slicing up vegetables and marinating chicken. And then for some reason, at 2:00, he was grilling it. So I was left wondering what sort of meal people eat at 3:00 (who aren’t happy child-free slackers who rolled out of bed at noon and are just starting to think about brunch). So I asked what meal it was for, and that threw everybody into a tizzy, and now I think they might all be hungry and aren’t eating because I said something about it. I tried to back out of it and told them to eat what they want, but it’s 3:30 now and nobody’s eating and I have no idea what’s going on or what meal is supposed to happen. I had lunch at 1:00ish…you know, lunch time.

Did I just ruin everybody’s fun?
